Did you hear about the scandal? Dark chocolate and trail mix had a Valentines baby in my kitchen! These Trail Mix Dark Chocolate Bars are so easy, just 3 ingredients. Melted smooth organic dark chocolate, coconut butter for the creamy fudge like factor and our favorite trail mix chopped up and sprinkled on top made with almonds, pistachios, raisins, dried cranberries and cherries. Candy bar meets trail mix!
Chocolate bars can be complicated with added fillers or ingredients, it’s hard to find one with a bunch of nuts and fruit for flavor. I decided to try and make a combo that I know we’d enjoy semi-homemade. There’s a bit of organic cane sugar in the chocolate chips, I looked at all of the types that were available line by line on the ingredient list and went with the best available made by Equal Exchange that’s 70% dark chocolate at Whole Foods.Valentine’s Day is a special day for Dawn loves food too. I started earlier in the year in 2017 and had Valentine’s Day in my mind as a launch date. I bought the domain, picked a host, started with word press and the rest is history. After a year I feel like I’m finally starting to get into the groove. Starting to feel more comfortable with photos, editing, writing and finding my voice. I try not to get too caught up with all the things that I still have to learn, I just chip away at things little by little and learn something new every day gaining momentum with love and intention.I’m more critical of myself than I think any troll could ever be. I think things aren’t good enough or they’re not perfect and I don’t want to put them out there in the world. So I wait, redo or start over again, I shelf the recipe because I know I can make it better. I’m realizing that part of the charm with this blog is that’s it’s new and I’m learning how to do everything from the ground floor, so amazed at what it takes behind the scenes to create all this!
The blog will take more shape as time goes on with contents, recipes and little snippets and tidbits of information that I will be passing along. Above all I really want to make eating better something that’s totally approachable and doable in every kitchen. If you’re a beginner, an intermediate or a pro at cooking my hope is somewhere within the contents here everyone will find something inspirational. Life is complicated but cooking and picking optimal ingredients for your health shouldn’t be 😊

Trail Mix Dark Chocolate Bars
Semi homemade and so easy, just 3 ingredients! Melted smooth organic dark chocolate, coconut butter for the creamy fudge like factor and our favorite trail mix chopped up and sprinkled on top made with almonds, pistachios, raisins, dried cranberries and cherries.
Ingredients
- 10 oz bag dark chocolate chips
- ½ cup coconut butter
- 1 cup trail mix
Instructions

Line a 2 quart (11x7in) baking dish with wax paper

In double boiler melt the chocolate chips and coconut butter slowly over medium heat. Stir and watch the pan until completely melted. When ready pour the mixture on top of the wax paper and use a spatula to push the chocolate into all corners of the pan evenly. Loosely chop the trail mix into smaller pieces and sprinkle the mix on top of the chocolate. Set in refrigerator for 30 minutes.

After the chocolate has set, bring the pan out on the counter and lift the entire chocolate chunk with the wax paper and peel the sides away. If you take the block lengthwise and cut in the middle, then the middle of each piece you will have four strips. Cut each of those strips into five for a total of 20 bars. Put each strip of five back on the wax paper and roll, then another strip and roll so to the wax paper will help keep everybody separated. Keep them in the freezer until ready to eat…. They keep the fudge like texture even in the freezer!
