HOW TO
Here’s the step by step for the Southwest Joe Mix. This is a *DOUBLE BATCH* pictured, I love freezing this for quick lunches!
Prep the veggies, dice and slice into bite size, halve the cherry tomatoes. Grab the biggest saute pan you have, oil er up and start the first layer of onion, red pepper and poblano. Cook for 5-7 till glossy and they start to soften.
Make a well in the center, add in the tomatoes and stir them around for 5 ish minutes in the middle. They’ll start to break down and render juice. Once they do that blend the whole veggie mix together and saute for another 5 minutes.
Make a well again and add the ground beef with spices. Same concept, keep it all in the center, get it browned and seared for 5 minutes before blending the entire mixture together. Finally add in your favorite salsa! Let it simmer and reduce the liquid, let all those flavors married together.

- 1 Red Bell Pepper
- 1 Poblano Pepper

- 1 Lb Ground Beef 85/15
- 1 Tbsp Smoked Paprika
- 1 tsp Cumin
- 1 tsp Chili Powder
- 1 tsp Redmond Real Salt
- 1/2 C Favorite Salsa
