Ready for a breakfast loaded with good fats that’s EGG FREE and topped with pure butter frosting ?! You’re covered and heading out the door to conquer the day with Paleo Pumpkin Date Muffins.
They’re fragrant with pumpkin spice, almond, walnuts, pumpkin & flax seed, coconut oil, pumpkin puree, dates and banana.
Let’s get this FALL party started.
Paleo Pumpkin Date Muffins are low on sugary sweetness with two bananas and a few dates for 12 muffins. So if you divvy all that up it’s like a bite of banana and 1/2 a date each…..just enough. They’re packed with good fats from 3 cups of seeds and nuts too!
I like my breakfast muffins to be hearty, they’ve got to tide that hunger. Slather on a some grass fed butter, sprinkle pumpkin spice on top, it’s a done deal.
I take requests, bring em’ on.
My sister asked for something she could send her daughter and husband off with in the mornings. Combined they have to steer clear of eggs, wheat and dairy due to allergies and intolerance’s. Keep it quick and easy to make and a grab and go breakfast. I’m always up for a challenge!
The butter on top is completely optional. Yes, there are trace amounts of milk solids in butter (I do okay with butter others choose to avoid it all together). For my dairy free-ers try sun butter instead as frosting! Sun butter is sunflower seeds pulverized like nuts butters are, super creamy and smooth, perfect for a muffin or bread, try it!
I’m not a huge baker, I’m more of a pantry “this and that” type of cook as baking is very precise. I headed to google land to do some investigating. Had to go through quite a few recipes to mine for diamonds and find muffins that really hit the mark. It’s not exact, I don’t color inside the lines, had to make changes and I’m thankful for the inspiration (see below for link).

We had company over when I did my first of many trial runs on recipe testing. Our friends son Lucian is 10 and he was my official “young taster” for the day. He’s a foodie in the making and was happy to help and critique the Paleo Pumpkin Date Muffins, I was under some serious pressure! Feeling the spot lights of Chopped with Alex Guarnaschelli giving me the eyebrow.
Younger pallets love sweets, they don’t typically like low sugar foods. I tried two different styles, one with the recipe as is and another with a half a date on top incase they weren’t sweet enough. To my surprise he liked the one with less sugar BEST and wanted to take the recipe home. That’s about as good as it get’s for me, mission accomplished.
This recipe was inspired by a version of this delicious muffin over on PaleoHacks, I do a lot of R&D when it comes to baking and testing, not always easy! If you’re starting out in a new realm of cooking it’s great to have inspiration like this.

Paleo Pumpkin Date Muffins
Ingredients
- 2 T whole flax seeds
- 1 c whole raw almonds
- 1 c whole raw walnuts
- 1 c whole raw pumpkin seeds
- 2 t baking soda
- 1/2 t sea salt
- 4 T coconut cooking oil
- 2 mash ripe banana
- 1.4 c chopped dates
- 3/4 c pumpkin puree NOT pie filling
- 2 T pumpkin pie spice
- 4 T grass fed salted butter
Instructions

Heat oven to 350f. Take the flax seeds and put into a small bowl and add 6 T water, let sit for 2 minutes to thicken. In a spice grinder (or coffee grinder if you can clean it easy) take the nuts and grind them until it looks like mini tapioca beads, not super fine coarse flour meal. As you go pour all into a large mixing bowl.

In bowl add all the remaining ingredients as they are listed above (there's some mashing and chopping) then mix until combined. The mix will be thick like a cookie dough vs a light cake- these actually keep you full 🙂

Line the muffin cups with paper and scoop 1 massive tablespoon (a little less than 1/4 cup) into each, then top off the smaller ones with the remains until they appear to be even- do your best, this recipe is forgiving.

Bake 30 min, insert a toothpick, it should come out clean. If it doesn't cook for another 5-7 and test again. When ready let sit and cool to room temperature, top with room temperature butter and a sprinkle of spice on top. If you can't wait till then dig in, melted butter works too!
