Easter is the kick off holiday for spring and summer- bring on the deviled eggs! Tired of the same ol’ same ol’ on the flavors? Here’s three Naturally Colored Amazing Deviled Eggs to bring to your next shin dig!
The egg whites are infused overnight with unique flavors and color that really stand out and shine. The egg yolks are more on the traditional side with a good quality mayo and organic mustard to keep the flavor complimentary and focused on those sassy egg whites.I love a good egg, I mean how much more American does a deviled egg get?! It’s a staple at our get togethers. We compare notes, we judge, we vote, we share recipes.
You’re one of two people; the maker or the eater of the eggs. The makers proudly strut their eggs in on the perfect holders so they don’t move in transit- they’re slippery little suckers. If your the eater you hover near the eggs and grab one, circle back for two and your goin in on that last one when nobody’s looking.
Here’s the line up;
Green Tea & Dill – subtle color and an earthy note that goes great with dill, more of a traditional deviled egg
Turmeric & Curry – vibrant yellow egg with a little spice from the curry powder, a play on a bar pickled egg
Pomegranate & Pepper – gorgeous deep purple and slightly sweet with no added sugar, even better than a beet style pickled egg. I used Pom Wonderful 100% pomegranate juice, all natural baby….Guys, how many times have you under or over done your eggs? Grey city is not so pretty and if their underdone your deviled-ness will be pretty lumpy.
Here are some fail proof tips!!
- Start with a great pasture raised egg, I love Vital Farms
- Set your eggs out on the counter so they can get to room temp
- Bring a large pot of water to a rolling boil
- When boiling add in the eggs with a slotted spoon/wooden spoon/skimmer
- Set timer for 12 minutes – that’s my magic number (I’m at sea level – you may go 11-13)
- Remove quickly and submerge in an ice bath- large bowl full of ice and water let sit for 10 min
- Crack on top and bottom – don’t over do it
- Get under that shell membrane and remove it
- Refrigerate until ready to use

Naturally Colored Amazing Deviled Eggs
Ingredients
Eggs and Whites
- 12 pasture raised eggs
- 6 t white vinegar
- 2 bags matcha tea
- 1 t curry powder
- 2 t turmeric
- 1 c pomegranate juice
- dried dill
- pepper
- curry powder
Deviled Egg Mix
- 12 egg yolks cooked
- 1/2 c quality mayo
- 1/4 c stone ground mustard
- 1/2 t salt
- 1/2 t fresh lemon
Instructions

Boil the eggs & cook 12 minutes - see notes on post for the perfect hard boiled egg! Submerge in ice bath and peel when cool. Cut eggs long ways put yolks in a small bowl and refrigerate.

Divide the egg whites into 3 groups of 8 for each flavor. Prep 3 mason jars or containers with lids to infuse the whites with flavor. Jar 1 is 2t vinegar, 1 c hot water and 2 matcha tea bags. Jar 2 is 2t vin, 1 c hot water, curry and turmeric. Jar 3 is 2t vin with 1 c pomegranate juice. Cover and make sure all whites are under the liquid to dye evenly. Let sit in fridge overnight 12-24 hours

Remove whites from mixtures, pat dry with a paper towel and set on large tray for serving. In a small bowl break up the yolks with a folk, add mayo, mustard salt and lemon. Put mix in a piping bag and top all the eggs with the deviled mixture. Finish the green tea eggs with dill, the turmeric with curry powder and the pomegranate with pepper.

If you want to make them all one flavor instead of the three different- triple the recipe you want to use!
If you like yellow mustard instead go for it, more mayo? Add it in!
