Great snack alert! Didn’t eat enough at lunch and you need a something before dinner? Need an alternative to all those Christmas cookies out there? Try these coco good fat bites and tide your brain and belly over for hours with some good stuff. Made with raw organic cashews, MCT oil, cacao powder, grass fed butter, collagen protein powder and a touch of sweet with coconut flakes and dates will give you a burst of incredible natural energy. No cooking required and only 7 ingredients!
Three bites are just about equal to a standard sized energy type bar. Nice thing about these little ones? Coco Good Fat Bites
1 ½ c raw cashews
½ c Medjool dates
4 T grass fed butter or ghee
½ c fine shredded unsweetened coconut
¼ c cacao powder
¼ c brain octane (mct oil)
Prepare
- In a food processor with chopping blade start with the cashews and blend to a coarse fine chop on pulse. Next add in the dates, butter, coconut, cacao powder and pulse again until all is combined.
- Add in the protein powder and pour the oil in over everything. Blend until all is incorporated together, take it easy if you overdo the blending you may end up with a paste!
- Grab a meatloaf size pan and cover the bottom wax paper to store the bites in. Use a tablespoon to scoop out a walnut size portion and with your hands then roll the bites into a ball and set on the wax paper, they can touch each other.
- When the first layer is full add another layer of wax paper and repeat, this should fill up your pan with two layers of the bites. When done refrigerate to store. My batch lasted just under a week and every last one was gone!
Tips
- *I use grass fed organic butter, it does have small traces of milk solids. If you prefer try a room temperature organic grass fed ghee or pure coconut oil instead, consistency may be slightly different
- Stick with 3 at a time if you are new to mct oil, don’t eat the whole batch at once. You have to titrate (slowly introduce) your body to it a little at first, think like when you eat too much fiber all at once; too much of a good thing 🙂
- Keep in a glass container or sandwich baggie until ready to eat as they may leave an oil mark on paper.
