Take your favorite wing’s in a basket and turn it into a salad! Buffalo Chicken Salad has shredded chicken and carrots, diced celery, riced cauliflower, green onion and a firecracker mayo sauce with smoky paprika and Tabasco (my fav) or you could use the Frank’s red hot too, you pick.
The ratio is about 3:1 veggie and protein with a healthy dollop-o-Whole30 compliant mayo. The cauli rice is so nice and crunchy raw, adds a perfect compliment to salad. No lettuce in sight. just the way I like em’, full of goodies! You can play with the amount of dressing and the heat from the sauce, I’m not shy of good fats so I tend to slather.
I should be growing feathers any day now, I have seriously ate chicken salad almost every dang day this month. OK, more like three times-ish, it’s so easy though. So easy to bake some chicken up, shred it and it’s ready to go. I’ve tried the shredded rotisserie bird from the grocery too, it’s great in a pinch but I like making it myself. That way I know what brand, if it’s organic fed or not, if it has a bunch of salt and rib meat or something else that I just. don’t. need.
This is how I think about food guys, my own internal check list, my rationale.
I think of ingredients, a quick run down like a checklist. What is the best route of travel in the moment with the choices I have. What am I cool with and what’s a no go item. This type of list is different for everyone. Not necessarily a ‘good’ or ‘bad’ list but more of a what do I know I need for fuel and how will the bod react to it. Sometimes it’s worth it and others not so much.
Now this buffalo chicken salad, all the lights are green to GO = enjoy!

Buffalo Chicken Salad
Chicken and carrots, diced celery, riced cauliflower, green onion and a firecracker mayo sauce with smoky paprika and hot sauce, it's all Whole30 compliant!
Ingredients
- 1 c shredded chicken
- 1/2 c diced celery
- 1/2 c shredded carrot
- 1/2 c cauliflower rice
- 1/4 c diced green onion
buffalo sauce
- 1/3 c Whole30 compliant mayo
- 1/2 squeezed lemon
- 1 t smoked parika
- 1/2 t Tobasco or Frank's Ret Hot Suace
Instructions

In a medium bowl combine the top ingredients together. You can mix them up ahead of time a little to make it more evenly distributed

In a small dish combine he sauce ingredients together, watch the lemon seeds

When mixed pour over the veggies and combine until the sauce is covering every single bite!
