Easy Spicy Carrot Dip is a snap to make and full of good for you ingredients. I had a ton of carrots left over in the fridge and I was getting bored with the usual raw sticks. I needed to do something else, my blender was calling…. it’s was sauce time.
When you’ve overbought and need to get veggies moving out of the fridge it’s either sauce or smoothie time right?
Easy Spicy Carrot Dip is made with a base of steamed carrots, sautéed onion and garlic, lemon, cumin, salty nutritional yeast flakes, smoked paprika then a bit of red pepper flakes for some POW and soaked raw cashews to bring it all together for that creamy dip factor.
It’s perfect for chips or your favorite veggie platter. A perfect brunch bring along or shower crowd pleaser. I can see using it in some type of noodle or zoodle dish too….more on that another day!
Secret Cheezy Alert!
Nutritional yeast is a common dairy free alternative and I use it sparingly for special occasions, when I do it’s always Bragg’s I grab off the shelf- here’s a link for ya.
All you need to do is sauté the onion and garlic for a while steaming the carrots. Once they’re done toss it all into a blender with a really tight lid or a food processor. It’s a little warm still but really tasty straight up and great cold too. Easy spicy carrot dip freezes well, I saved half a batch for a road trip with the ladies and it thawed beautifully!
Leave it overnight and the spicy pepper flakes really kick in, you can taste it on the end, it’s not a burn your face off hot, it’s there though. Then you have to have more…..
This is one of those concoctions that your foodie friends will guess and try to figure it out. They’ll look puzzled. It’s kinda fun keeping them guessing for a while isn’t it?
The carrot is the stumper though, you can’t really taste it but it gives the dip such a beautiful vibrant color. There’s a hint of sweet but the salty nutritional yeast flakes and spicy hot take over. As always, it’s gluten and dairy free with no sweeteners of any kind.

Easy Spicy Carrot Dip is made with a base of steamed carrots, sauteed onion and garlic, lemon, cumin, salty nutritional yeast flakes, smoked paprika then a bit of red pepper flakes for some POW and soaked raw cashews to bring it all together for that creamy dip factor!
Ingredients
- 1 bunch carrots large chop
- 1/4 c raw cashews
- 3/4 c hot water
- 1 sm white onion diced
- 5 cloves garlic
- 1/2 c nutritional yeast
- 1 t red pepper flakes
- 1 t smokey paprika
- 1 t cumin
- 2 T lemon juice
- 3 T extra virgin olive oil
- 1 t Himalayan pink salt
Instructions

Prep- Chop the carrots into 1 inch chunks, dice the onion and mince the garlic. Get your steamer, a small sauce and saute pan out. When the water is boiling then cover and steam carrots for 7-8 minutes until fork tender. Boil 3/4 c water in small sauce pan, saute the onion and garlic until translucent, about 5 minutes. and add to your blender when ready with the cashews and let them soak until the carrots are ready.

Now that all the hot things are done your ready to assemble. Be careful as things are hot! This isn't the time for a flimsy lid - if you don't trust it use a food processor instead. In the blender add the carrots, onion, garlic, yeast flakes, red pepper flakes, paprika, cumin, lemon juice, olive oil and salt.

Hand over top lid with a towel, turn blender onto low and once the blending starts go to high. Blend for at least 1 minute, maybe two. Your looking for a very creamy smooth texture to your dip. If needed add a T of water at a time to thin out and a little more salt if you'd like at the end.
Recipe Notes
If your not into spice omit the red pepper flakes, if you want more go for it!
Freeze any leftovers to have later- perfect quick party dip!
