GF/DF garlic bread huh? YUP…this craving is met folks! A crunchy, delectable baked loaf topped with a mixture of half unsalted butter & half walnut pesto made of olive oil, garlic, basil and parsley then slathered on the bread and broiled to perfection. This gluten and dairy free pesto garlic bread will compliment any dish and may even steal the show it’s so dang good. I recently served it with pesto steamed mussels for dinner. It was perfect for sopping up all that amazing broth!
Schar is one of the best gluten free brands I have found out there in grocery land. They make buns, breads and baguettes too! The GF landscape is changing for the good; so many incredible brands are creating delicious alternatives. The demand is getting louder every day! Schar is a European staple and is a rival sandwich style bread to any other that is mainstream today. I really like it toasted to give it a little extra texture.
Follow your heart makes the dairy free Parmesan that is in the pesto….. it’s salty and has that twangy sharp aged flavor. It’s always in my fridge and ready for any pasta occasion!
When I make a batch of the pesto; it lasts for weeks in the fridge. I also made a divine pesto risotto with asparagus, fresh green peas and seared scallops with it too….
The garlic is cooked perfectly and slightly browned; the kitchen will smell amazing! Cut on the diagonal for a little style- aren’t they pretty? 😉
Recipe
2 T Kerrygold unsalted butter- softened
1 Schar gluten free baguette
Directions
- Turn over on broil at 450 F
- Combine the pesto and butter in a bowl
- Cut the baguette in half lengthwise and drop on a cookie sheet
- Spread half the pesto mix on one side and the rest on the other covering each completely
- Bake uncovered for 10-15 minutes
- Cut on the bias and serve hot!
Total time 20- 25 minutes
Serves 8-10 pieces
