WHY CILANTRO
Traditional pesto is made with basil however I find it really hard to get fresh basil all year long. How about you? Usually it’s pretty darn expensive in stores even when it’s in stock. I really need to get busy on that herb garden idea, sure would make things so much easier and cheap!
Cilantro is readily available all year long and it’s always fresh in the organic section of the grocery. The price is right and the flavor is perfect along with parsley.
HOW TO PACK THE FOOD PROCESSOR
To begin the Whole30 Cilantro Walnut Pesto add the walnuts first at the base, then the five cloves of garlic. As you’re rinsing your herbs squeeze off the excess liquid, twist and break apart in big clumps. Stuff the cilantro and parsley in all around to the top. Pack it in!
If you find that herb “greens” do not reach the top of the food processor you can use the stems if you need to but it’s not required.
LET’S BLEND
Have the cup of avocado oil ready on standby. Start your processor on low speed. Slowly pour in the oil and watch the magic happen. Blend about 2 to 3 minutes. You may need to take a break in the middle and scrape everything off the sides and push it down. Store in an airtight container in the fridge for up to a week.

- 2 Bunch Cilantro
- 2 Bunch Italian Parsley
- 5 Cloves Garlic
- 1 Cup Raw Walnuts
- 1 Cup Chosen Foods Avocado Oil
- 1 Tsp Redmond Real Salt
Instructions

In food processor add walnuts and garlic. Rinse the herbs in water and 'wring' dry like you would a sponge. Then, twist and break off the leaves and stuff them all in.

Get as many greens as you can. If you need the stems use them too, all the way to the top! Cover and begin on low, then pour the avocado oil in slowly, like a pancake syrup style drizzle consistently.

Blend for 2 minutes, if needed use a spatula to push bits down again then blend again. The texture is a little nutty still with big notes of garlic and oil is still slightly separated. If you'd like keep going another 2 minutes for more of a paste!
