Behold, Whole30 Stuffed Meatballs with Spicy Bloody Mary Sauce!
Meet the party meatball that LOW CARB dreams are made of.
We’ve got a spicy arrabiata style Bloody Mary inspired sauce with Tabasco instead of red chili flake. Made with sautéed celery, onion, tomato sauce and a hearty dose of celery seed with black pepper that make up the zingy dipper.
All the toothpicks are loaded with a grass fed ground beef Olive Stuffed Meatballs!

I do love a good meatball.
Believe me, I’ve hovered around the app table a time or two. Most sauces are a variation of ketchup and brown sugar, barbecue, sweet teriyaki or a marinara.
Every. single. year. We look forward to the crock pots don’t we?! The flavors, the smells!
At the store meatballs are Italian mini style or the bigger turkey ones. The big ol’ bag of frozen with a bunch of ingredients we can’t pronounce. The list is long and in fine print that these eyes have to squint for. Not saying I won’t still eat one or ten, but if we can change it up why not?

The Bloody Mary Marinara Sauce is really easy to make and so are the meatballs. All together in about an hour including baking time. You can even get it all ready ahead of time and bake them at the party.

Whole30 Stuffed Meatballs with Spicy Bloody Mary Sauce
Meet the party meatball that dreams are made of. Whole30 meatballs stuffed with olives, dipped in zingy Tabasco Bloody Mary dipping sauce. Here's a new hearty low carb appetizer that will WOW all your guests!
Ingredients
- 1 lb grass fed 85/15 ground beef
- 1/2 c almond flour
- 1 egg
- 1/2 t fine pink salt
- 2 t dried onion
- 2 t ground black pepper
- 1 t celery seed
- 1 t Tabasco sauce
- 1 5.75 oz jar small Spanish olives
- 1 T ghee
- 1 1/2 c Bloody Mary Marinara Sauce (recipe linked!)
Instructions

Heat oven to 350f. In a large mixing bowl combine the beef, almond flour, egg, all the spices and Tabasco sauce. Mix with your hands until it's all a big ball of meat, nothing left in the bottom of the bowl! About 1-2 minutes of kneading together.

Line a 2 Qt (8in x11in) baking dish with ghee and grab a tablespoon to measure the meatballs. Drain the olives and put them in a small bowl. Have the meat, olives and the tray ready for assembly.

Take a heaping tablespoon of meat and pat into the palm of your hands, think the size of a mini slider. Then, add one olive in the middle and close your hand, pinch the meaty sides around the olive to completely wrap it inside, roll it around in your hands to form a little gorgeous meatball.

Repeat the process and assemble the meatballs in a 5 across and 7 down fashion in the baking dish, they touch each other; it's a snug meatball party! Bake for 30 minutes. Serve with toothpicks and the Bloody Mary Sauce on the side to dip. Best served hot/warm but they can sit out at the party or be reheated for a late night second round 🙂
Recipe Notes
Serving option - You can use an entire batch of the Bloody Mary marinara sauce (3 cups) and combine the sauce and meatballs into a slow cooker to keep warm at your party, options!
