This is a close second to the deli curry chicken at Whole Foods or Spouts y’all. Instead of the cranberries we’re using small sliced red grapes. They are the perfect bit of sweet and they blend with the creamy curry mayo insanely well.

I don’t dig iceberg or romaine lettuce, just not my thing.
It ends up being picked over and pushed to the side, so meh -why bother. I do like a good butter or red lettuce though, could be a texture thing. Or that they’ve just been played out. Every.Single.Restaruant. I mean really…..
Paleo Curry Chicken Salad can be paired with a big leafy salad, lettuce wrapped, tortilla wrapped or just go for it as it is.
CURRENT MOOD
Lately I’ve been on a quick and painless lunch kick for work. This Paleo Curry Chicken Salad is EASY PEASY. I have a full time job, full time life AND I blog it up as much as I can. I’m juggling like you- work, life, fun, family, sleep, shopping, meal prep and trying to make it all somehow work without stressing out about it.
Is there such a thing as a HEALTHY HUSTLE?! As long as I get some zzz’s, movement and good food in the belly that’s one heck of a start.
Taking time to bake, slice, dice and make dips or dressings take on average about 2-3 hours on a Sunday for the weekday meal prepping. I fit in a few loads of laundry, maybe a vacuum or a dust and I’m done. Over the years this has become my Sunday routine.
Know what? I enjoy making food that I know the exact ingredients.
It’s a matter of time or money really guys. If you’ve got the money to hire a chef, buy pre made or prepped dishes everyday fantastic!
If you want to explore flavor, be self reliant while saving the labor expense by putting in the sweat equity, that’s an option too. Dive into your kitchen 🙂
Do what you need to do to make your food and nutrition a priority. Putting in the time now, however that looks for you…will do nothing but help in the long run.

Paleo Curry Chicken Salad
Ingredients
- 1- 1 ¼ Lb Shredded Chicken Breast Filets
- 2 T Yellow Curry Powder
- 1 1/4 c Whole30 Basic Mayo
- 1 B Celery
- 1 c Red Grapes
- 1 c Raw Cashews or toasted
- 1/2 t Redmond Real Salt
Instructions

Set oven on 350 and add season all of your choice, bake breasts for 45 min. Or use a whole baked rotisserie chicken. You'll render about 3-4 cups of chicken. Make sure its all chopped and shredded.

While the chicken is baking make your mayo OR use a paleo style mayo like primal kitchen. Chop the celery, halve the grapes.

Drop in all the ingredients in a large bowl when ready. Stir until everything is well coated with the mayo curry blend. Enjoy!
